Pierre Baldelli embarked on his culinary journey at the age of 16, starting in the esteemed French restaurant L’Escargot de Montorgueil in Paris. It was there that he first discovered his passion for hospitality. In 1989, he joined the renowned Le Manoir aux Quat’ Saisons, Raymond Blanc’s two Michelin-starred restaurant in Oxfordshire, where he was mentored by the legendary restaurant director Alain Descenclos.
